I know it’s been a while but I think I underestimated how busy I would be with a toddler and an infant. I knew it would be a lot but it’s actually more. If that makes any sense.
I have truly forgotten at what point a baby meets a milestone. I was glad to see that I kept a journal for my son’s first few months. I was also pretty good with his baby book for the first year. I have yet to write anything in Matthew’s baby book. Whoops, maybe that’s because he doesn’t have one yet.
Ok…I’ll get to the topic now. Fussy, fussy baby. Luckily Matthew is not colicky but he sure seems unhappy. He is worse in the evening but then falls asleep pretty hard at 10 something. He overall seems like an angry baby. He furrows his brow and frowns constantly. I can’t put him in the swing or the bouncy chair without him screaming after a minute passes. Apparently he likes to be held constantly.
I’ve heard you can’t spoil a baby in the first four months but it still worries me. He doesn’t nap in his crib all day. He normally sleeps on someone or in my arms. It is very difficult. I need to start giving him some tough-love soon. I absolutely refuse to have an unhappy baby.

INGREDIENTS:
- 4 Boneless, skinless chicken breasts
- 1/2 cup diced low fat boiled ham
- 1/2 cup shredded low fat Swiss cheese
- 1/8 teaspoon minced garlic
- 2 tablespoons white wine
- salt/pepper to taste
- 8 oz. plain low fat yogurt
- 1 tablespoon milk
- 1 cup crushed seasoned bread crumbs

COOKING INSTRUCTIONS:
- Combine ham, Swiss cheese, garlic, wine, salt and pepper in a bowl to make a filling.
- Preheat oven to 350F. Rinse chicken with cold water and pat dry with paper towels.
- Cut a slit in the side of each breast to form a pocket.
- Stuff each pocket with 1/4 of filling. Press to close or secure with wooden picks.
- In a flat dish, combine yogurt and milk. Dip each breast in yogurt mixture; turn to coat well.
- Roll in bread crumbs and place in well?greased baking pan.
- Bake at 350 for 45 minutes or until done.
- Serve with pasta and zucchini.
